Pulled Turkey on a Bun
2-3 turkey legs
2 turkey thighs
¼ c. chopped onion
2 T. butter
½ c. water
salt & pepper to taste
Large bottle of BBQ sauce or make your own. 

Lay the turkey in a crock pot, add onion, butter (not melted), water and salt & pepper. Pour the whole bottle of BBQ sauce on top. Cover and cook on high for 3-4 hrs.  Turn to medium or low heat and continue cooking for 4-5 hrs. The meat will fall off the bone. Pick out any bones and add more BBQ sauce if needed.  Stir well until heated through and serve on a bun.
 
Turkey Barley Soup
2 T. butter
2 onions, chopped
2 cloves of garlic, minced
¼ lb. mushroom, sliced and optional
½ t. rosemary, crushed
6 c. turkey stock
¾ c. Pearl barley
2-3 c. chopped broccoli
2 T. cornstarch
¼ c. water
2 c. milk
Saute onions, mushrooms, garlic and rosemary in butter. Pour in the turkey stock and ¾ c. of barley. Simmer for about 45 minutes, until barley is soft. Stir cornstarch into water and 2 cups of milk, add to soup. Stir in broccoli and simmer for 10-20 minutes over low heat. 
 
 
Savory Turkey Meat Loaf & Roasted Potatoes
1 can Campbell’s Tomato Soup
2 lb. ground turkey
1 can Durkee French Fried Onion
1 egg beaten
¼ c. Worcestershire Sauce
8 medium potatoes cut in quarters
 Mix ½ cup soup, turkey, 1/2 can onions, egg, and Worcestershire thoroughly. In a baking pan shape firmly into 8” by 4” loaf.  Place potatoes around the turkey loaf. Bake at 350 for about 1 hour. Stir the potatoes. Spoon the remaining soup over turkey loaf. Bake another 25 mins. or until the turkey loaf is done. Stir potatoes. Sprinkle remaining onions over turkey loaf. Bake 5 minutes or until onions are golden.   Serves 8.
 
 
Turkey Salad Sandwich
4-5 lbs. turkey breast
onions, chopped
celery, chopped
green & red peppers, chopped
walnuts or sliced almonds…optional
mayonnaise
salt & pepper to taste
lemon pepper to taste
fresh green grapes, whole or sliced in half….optional
 
Cook turkey in a crock pot for 5-7 hours or until meat falls apart. Remove and let cool. Dice turkey and place in a large bowl. Add all ingredients except grapes. You can add whatever amount of mayonnaise that you like. Stir gently and then add the grapes. Serve on a bun or in a wrap.
